This week's CW suggests M&S stuffed vine leaves and their range of blueberry anbd cranberry bars.

Meanwhile C+ gives advice as to how the read the labels on the foods in the supermarkets - especially with regard to salt levels :wink: Apparently - the list of ingredients must be in descending order of quantity by law. and if you see the words soidium benzoate/monosodium glutamate and fructose syrup when the food claims to be "natural and wholsesome" - C+ adivses to "leave it on the shelf" :wink:

In the light of Paul's recent health scare - I posted up some cosy chatty recipes down in the Members' Section to help keep that cholesterol down and enjoy summat tasty as well :lol:

As I think our cycling lurkers do enjoy this blog section of the Cycling Forum as a handy "cook book and synopsis of what the "cycling rags" suggest :wink: - I think I should at least put the suggestions which were recommended to me by a dietician.

Thes dietician gave me a reipe involving lean lamb, tossed in herby flour and fried in olive or sunflower oils - then add some veg stock and add chopped carrots, parnsnips and tomatoes/ Stir well. Let simmer for half hour. Add sliced courgettes and mushrooms and some broad beans and sultanas. Boil it up and then let it simmer away on the stove


Soak and steam couscous to serve whilst this simmers.

They also have various sandwich recipes. Aa Paul does not like fish - the chicken one requires a tablespoon low fat fromage frais (Danone ) - shredded lettuce leaves. Skinned cooked chicken - cut into strips - half teaspoon Dijon or other quality mustard - sliced celery stick and salt/pepper to taste. - easy on the salt

Per the dietician (- she says to spread the fromage frais over the slices of bread/roll/bagel/baguette - whatever One half. Place the lettuce on top. Toss the chicken in the mustard in a bowl - then arrange over the lettuce. Top wiht the clelety and sliced almonds or shelled pistachio nuts or leave out the nuts if allergic Season to your taste and then place teh other half of the bread/bagel on top.

You can substitute watercress/sweetcorn/low fat mayonnaise/tuna/cottage cheese/sliced button mushrooms/prawns/chives accordingly They're all low cholesterol and not "yuk"

A lot of the stuff surprisingly involves a wok/frying pan and olive oil/sunflower oil The dietician once came to ours and cooked up fried pork and pears with a big dollop of dry sherry in the mix. (Took half hour to cook this and she also says it is low cholesterol content if you use the right oil and a lean loin fillet or escalope )


It did surprise me as I've always up until then associated "low cholesterol" with steamed fish and boiled potatoes :wink:

This time - the rags focus on magnesium. I read that magnesim helps mhy body process fats and proteins and helps protect my bones and muscles too.

So :scratchchin: what foods contain this mineral which helps cyclists and others fine tune their human machines to optimum performance? :scratchchin:


Well .. Popeye was right.. spinach :lol:

Bran.. wholemeal bread.. lamb - especially kidneys.. red meat .. :cloud9: almonds (see recipe with the trout above pages ago now :lol:) .. beans(all types) and er.. tofu.


Look .. to make tofu at least tasty.. add it to a veggie stir fry with bean sprouts . sliced almonds and your own tastes in sauces and meats. :lol: It also helps cure migraines too :wink: per my cycling rags :lol:

I have your health at my heart. A healthy person makes a decent driver after all.. as well as a cyclist :wink:

November's C+ reminds us of how good CHOCOLATE can be :bow:


CW" takes on the comfort food. OK so we have the "snack" - this time the "Naked Cherry Raisins" :lol:

But the main article reminds us. FOOD give us GREAT PLEASURE!

I admit to finding a decent meal far more satisfying than any indulgence on bike or in car :lol:

CW reminds me that there's nothing better that a hot cup of coffee after a hard winter ride. :bow: CW reminds me that my penchant for a decent claret is actually "good for me" :lol:

It also tells me that my liking for properly filtered decent strengght coffee provides a decent anit-oxidant if drunk in moderation. I admit to 4 regular cups per day . in a mroning and after evening meal. I =sig water or pure fruit juice in-between :lol:

CW reminds me that my love of dark Lindt.. Green& Blacks.. dark velvery Belgian .. contains many healthy minerals and so long as I do not over indulge here.. I will get my telegram from the King or Queen on reaching my centenary year :lol:

Butter? But Vit E. K & D plus selenium tell me that I should still spread something which will never be better on my knife. :lol:

It's about moderation. Responsibilty not to "pig or glutton" something really tasty :lol:


I am sure we have some tasty ideas already on these true goodies :lol:

This week .. carrots again. They do repeat - but we cannot deny the benefits of carotene and its Vit D benefits per my cycling rags and various recipe books. I think I have as many recipe books as I have driving/cycling ones :lol: I actually enjoy "playing in the kitchen" :lol:

Anyway . these recipes may be OK for Paul and Clare to try in the camper van :lol:

It should be Wildy :neko: posting this as this is something I did eat "bei ihr" :lol: :P

Carrot, Apple and Celery Soup. She says a desert apple is much better than a cooking apple or a Bramley for this one. She usually uses any "bruised" fruit in the fruit bowl. She says a "traditional cooky will give it a tarty taste - if you like tarty start on taste buds .. then by all means .. :lol:

Serving 4 adults

You need

2lb carrot - chopped

1 medium onion

1 quart veg stock (about 2 pints :wink: I'm English OK! :lol:

3 sticks celery

2 tablespoons tomato puree paste

1 bay leaf

2 tablespoon caster sugar


3 eating apples

half a large lemon

celery leaves to garnish

seasoning to own taste buds :wink:


OK - put the carrots/onion/celery in pan .. with the stock. Bring to boil.

let simmer for 10 mins

Peel.. core and dice two apples. Add this with the puree . sugar and the bay leaf to the simmering mixture.

Reduce the heat and just let it continue to simmer away for 20 mins.

SLice .. core the third apple. Slice it into slices.. keep the skin here.
Put these in another pan and squeeze the lemon over this. Heat till tender.

Drain and set aside.

Place the carrot/apple soup mix in a blender and blend till smooth, I have a hand held thing which I bought from Asda for three quid. It does the job :wink:

Reheat . season to taste.. garnish with the third apple's slices and shredded celery leaves.


I can guarantee your taste buds will scream for more and your body will just love it. :lol:

{wildy :neko:'s version does punch it up with chopped ginger root whilst Krissi adds ginger and calvados or a slurp of apple wine. :lol:)

OR how about carrot topped beef pie. This one happens to be a mainstay of my own mother. :lol: My Mum: :yikes: She''s always telling me to "be careful".. "wrap up warm" and "eat well" :bow: Mums/Mamas .. how would we ever survive without their nagging concerns :lol: :bow: But I suppose .. like myself as a father .. I will never cease to feel responsible and supportive of my own kids .. just like my own parents will always give me their blessings. :lol: It's what family life is all about :wink:

Anyway .. Paul and Clare. I think you might be able to cook this one on your quaint range up there.

For this you need:

1 lb LEAN mince. All supermarkets provide this. Alice asks our butcher :wink:

chopped onion

one crushed garlic clove

1 tbs plain flour/cornflour

1 pint beef stock *use Oxo cubes :wink:

2 tablespoon paste tomato puree

chopped celery stick

chopped fresh parsley

1 tbsp Worcestershire sauce

1 and half pound diced potatoe. any which mashes well :wink:

2 large carrots -diced... but you can use the pre-packed stuff

ounce butter#
3 tablespoon skimmed milk


This so easy peasy.

Fry the beef in frying pan.. add the onion and garlic... stir it up for 5 mins

Add the flour.. cook for a minute and add the stock/puree/Woprcs sauces/celery and season to taste.

Bring to boil. Then reduce the heat . simmer it for 20 mins.-ish. :wink:

Spoon into a normal pie dish.

Ci=ook the potatoes and carrots for 10 mins or til soft. MAsh them

Add the butter and milk. and any remiaining parsley.

Sppon over the beef mixture and then place in over .. 375 deg C/gasmark 5 for 40 mins or so,
You can heat and brown under a campervan grill Paul :wink:

I can safely say tasty and healthy. :wink:

As someone who had a big scare long ago, eye-related, and went to see a specialist I was told carrots really are good for the eyes.

So let's hear it for carrots! :clap1:

Try this smoothie

8 strawberries.. i orange (segemented).. 4 fl ox semi skimmed milk.. 4 0z low fat yogurt.. 3 tsp clear runny honey.. 8 ice cubes

Put the strawbs.orange.milk yogurt into a blender Mix till . creamy Sere with ice cubes. Truly dreamy :wink: It also gives immense amount of healthy fuel too :wink: to body. :wink:

Last week - CW told me to eat more haddock and sardines because of the stamina they could accord me and the benefits to my heart.

This week they remind me to increase my intake of Vit C as this will boost my immune system and keep my bones and teeth and cartilages healthy.

OK - where to find this Vit.. citrus fruits.. leafy greens (and the deeper the green . the more nutritious per the qualified dietician in the family. :lol:

Strawberries, sweet peppers (green/red/yellow/orange) . tomatoes and potatoes are all decent sources of this.


They also have a decent spread on "seasonal goodies" this week.

UK produce currently in season and despite the summer wetness - I have harvested Bramley and Cox and Conference Pears from the three trees in my own garden. I have one chestnut tree at the bottom of the garden and Alice roasts them and saves some to stuff our turkey/pork leg whatever at Chrismas time :lol:

CW tells me that autumn lamb is also in season along with pheasant and partidge.

Veggies?

Well the normal root veggies -including the much maligned sprout is in season at the moment. Sprouts are fine if steamed and seasoned lightly and in small servings :wink: Alice (my wife) tends to chop up left over sprouts with other left over veggies and dress in a salady sauce on a gem lettuce leaf. That also works quite well iand gives the sharp tasting sprout a gentler feeling on the taste buds :lol:

Other veggies in season. include beetroot. I love this boiled and tossed in malt vinegar to complement my Sunday Roast beef :cloud9:

Marrow? Alice removes the middle seedy bit and then stuffs it with minced beef, or pork, with onions and herbs before roasting it in the oven.

Courgettes? Steam and serve with anything you like :wink:

Mushrooms? Oh .. how I love these with my grilled lean back bacon, sausage, hashed browns and tomatoes on a lazy Sunday morning :lol:


By the way.. I have grown up eating bacon, ham, red meat as have y parents and grandparents. Since my Dad is still alive and my grandparents reached 100 years and 98 years this year . .I think safe to say bacon butties and the odd supper of fish and chips washed down with beers and red and white wines over the years does not appear to have had any dire effects here :popcorn: Of course ..they ate in moderation and ate a full variety over those years .. and - er .. rode bikes.. walked .. played tennis and golf, went swimming..

I guess healthy lifestyle means never overdoing things in reality. If you do so.. then as my own Great Gran observed to me when I was about 15 years.. you can have your cake and eat it. :wink:

But courtesy of CW "Health & Fitness" Mag - which I urge all to buy as lots if useful advice as to lights and winter gear :bow:

I must share this recipe with you all. I hope our lurks/browsers will look and try this one out.

Paul.. know you have some problems in the kitchen area - but Alice says they do bake OK in a small Teflon Oven/Grill thingy which looks a bit like a toaster but is a sort of grill /cum oven and she also suggests you invest in a an electric crock pot/ an electric steamer and one small electric deep fat fryer - which you can buy from Comet for £30/£50 or so :wink: -
They will serve as enhancers to your camper van and be a boon long term :wink: .

Alice being Alice :bow: She tested this CW recipe in the main oven in our kitchen and then in the Telfon mini oven thingy (but found she had to bake in small batches as it is about the size of the average toaster :lol:

But this recipe.. blimey. I have to say CW has given me a right treat here :bow:


Check out the rest for some sound advice in winter riding but to entice taste buds to buy the "Health and Fitness" supplemental :wink:


The ultimate Fruit and Nut Bar and yummy warm with custard or cold as a biscuit

50g brown sugar
80 g butter
160 g apple puree
80 g rolled oats
1 banana (crushed

80 g sultanas
50g glace cherries
50 g dried apricots
25 g linseeds

25g pumpkin seed
25 g sunflower seeds
50 g chopped Brazil nuts

25 g flaked almonds
half teaspoon mixed spice

half teaspoon ground cinnamon

80g wholemeal self raising flour#
2 eggs



Preheat oven to 180 C ?Gas mark 4 (or just heat up the Teflon mini to max :wink:



Line the baking tin with parchment


CREAM the butter and sugar (as you do with a normal sponge cake :wink:)

When pale and creamy - Sieve in the flour and mis welll .. then .. mix in the apple puree and all the dried fruit and nuts .. Mix well.

]Stir in the spices and add the eggs .. dribble so it does not curdle :wink:


Spoon into baking tin and smooth over the surface to make it even. :wink:



Bake till golden for aroudnd 20 mins.

Allow to coool and cut into slices .

If you use mini oven.. do in batches :wink:

Enjoy! I still am :lol:


These slices give energy .. not fattening :wink: and certainly so full of good stuff that they can be a meal in themselves to some out there :wink:

Recently - CW has been running snippets on minerals.. iron.. clacium , magnesium and - this week - selenium.

Selenium is thought to have qualities which help prevent cancerous cells developing and is also pretty good for cardiovascular problems/

SO what food is it in.. poultry.. Brazil Nuts (hhmm choc coated ones which appear by magic in my Christmas stocking over the mantlepiece :lol:) .. tuna |(for those who like fish :wink:.. oysters (for those who like fish and a bit of fun :hehe: allegedly :boxedin: .. brwon rice and wholemeal bread.

So what's a quick recipe?

Well .. at Christmas - lots of left-over turkey .. or if you don't fancy a whole turkey - buy turkey breasts . :wink:

Grate a teasponn fresh ginger... tablespopon soy sauce .. tablespoon fresh chopped coriander.. pinch of sea salt .. balck pepper .. flour and olive oil.



Chop or mince the turkey breast and combine with the coriandere/soy sauce, ginger and seasonings . Set aside for minute.

Shape into four burgers and douse in flour (which you can season to own tastes)

Heat teh olive oil in frying pan and cook the burgers for 3-4 mins. Or brush with the oil and grill them. or you can bake in the oven


Wrap them in a tortilla wrap and serve with shredded lettuce, baby cherry tomatoes, avocado slices and mayonnaise.. or serve on warmed wholemeal bread rolls with plain Greek style yogurt instead orf low fat mayonnaise.

If it red meaty iron you want.. then venison burgers. :twisted:

one onion.. one carrot, 12 oz minced venison, 2 oz bulga whear (soaked for 30 mins and drained) , 4 tbsl chopped flat leaf parsley . egg white and black pepper to season.

Chop the onion and grate the carrot. Mix all ingredients (no oil) and leave in fridge for an hour.

Form inot burgers. Brushj with the oil.. grill. till browned on each side. Serve on burger bun with lettuce/tomatoe etc.

This week .. calcium - found in dairy products and green veggies.. so how about trying one of the suggested smoothies again....


blend strawberries ... orange, semi - skimmed milk. palinj yogurt and a dash of honey and vanilla essence .. :cloud9:


Or make a green leaf salad .. with cos lettuce, spring onions, cucumber, shredded coconut (from supermarket or health shop)


Dress with 4 tbsp lime juice (you can get in Tesco :wink:) 2 tbps Thai fish sauce from supermarket .,. one chopped red chilli// one crushed garlic clove/// 2 tbsp chopped coriander or dill.. andchopped fresh mint.




Shred the lettuce - toss into a bowl. Slice the spring onions and the cucumber into fine slices

Get an old jar.. put all the dressing ingredients inside and give it a good "cocktail shake" :lol:


Pour over.. sprinkle with the cocunut .. serve with grilled chicken.. 10 minutes and therapeutic :cloud:

This week "Omega 3"

OK .. all oily fish and fish oil capsules to keep heart, weight, immunity etc in check.


10 minute recipe for those who like fish :wink:

Claire.. take note. One tasty meal for you as I think you might like fish.

Smoked trout from market/supermarket does not need cooking and this is something my wife serves up for me after a busy day :lol:


But when choosing your smoked trout.. my wife tells me to advise to go for the pinky beigy colour as "rosy is artificial"

You need one trout per person.

2 oz watercress

radicchio pieces

2 ripe pears


lemon juice .. tablespoon or to taste :wink:

two table spoon extra virgin olive oil

salt/black pepper to taste


3 tablespoon soured cream

2 tablespoon creamed horseradish (or horseradish sauce to own tastes :wink:)

thinly slices brown or whole meal bread to serve.

So .. put the watercress and radicion in a bowl and add strips of your smoked trout

Core an slice your pears thinly

Place the pear slices in a different bowl and toss them ina little of the lemon juice. This stops them from going a bit "manky brown" :lol:

Add to the salad.


Use the remaining lemon juice for the dressing.

You put the olive oil and lemon juice in the bowl with the seasoning to taste.

Mix. Pour over the salad

Mix the soured cream and horsradsih sauce separately. Spoon over the salad. Serve with buttered brown bread.

Good grief.. this week they are telling me to eat some "lardy cakes" :lol:


But like the car.. the human engine also needs..


oil and a bit o' grease! :wink:


Typically they tell me that I can only eat this right tasty stuff if I ride my bicycle with more "rhythm" :lol:

CW produces a little table which is supposed to guide me as to my "Basic Metabolic Rare". (It seems at my age (30 to 60 years :wink:) I am supposed to multiply 11.6 by my body wieght and add 879 to this. : :? ) . and CW then solemnly inform that that my lying horizontally on the sofa whilst I watch repeats of "Top Gear" :lol: uses a mere multiple of 1, driving my car is a little more taxing at 1.5 and that my "blind obedience to the law" :lol: of "practising archery after church on a Sunday" uses up a multiple of just 2.5 Cycling will burn up a multiple of 5 and riding up hill sends the lycra into total meltdown. :lol:

To get my lardy intake.. CW encourages me to eat..


bananas, wholemeal bread, scrambled egggs, alnuts. olives, chicken, avocado, green salad, yoghurt, salmon, mixed veggies and Udo's oil with each meal..


OK.. so I like all the above anyway.. but.. but.. :?

Wot?

This week C+ looks at cake. They recommend

"Taylors of Harrogate" range :cloud9:


I admit to enjoying their products :cloud9:

Their cakes are close to home baked cakes. :cloud9:

However, nothing beats the smell of a freshly baked cake. :cloud9:

C+ mag.. refer to Taylor's Ginger cake.. which ist very good.. moist.. und :bow: very tasty. especially if washed down with their tea or fresh filtered coffee :cloud9:


But we have a Ginger cake. (I also make Gingerbread.. but I cannot make to same level as GRASMERE :cloud9: :angel: :cloud9: Achhhhhhh!)

But I do a Ginger Cake which get wolfed down.

250 g plain flour

50 g gorund almond

pinch salt

heaped teaspoon ground ginger

pinch ground cloves

one lemon]

125 g soft brown sugar

4 tablespon honey - ish. :cloud9: (runny)

one tablespoon black treacle

3 lumps stem root ginger

2 eggs

2 tablespoon milk

teaspoon bicarb soda

100g butter

Preheat oven to gas 4/180 c. Line a shallow cake tin with foil


Sieve flour/almond/ground ginger/cloves into mix bowl. Grate zest of lemon. Add this.

Put the brown sugar (does not matter if hardened :lol:) und butter into saucepan. Add the runny honey - chopped stem ginger.. black treacle. Squeeze the lemon juice.. add it to this mix. Cook on low heat .. stir with trustiest wooden spoon on occasion :lol:

(you may lick.. but do rinse it :lol:)


Pour the runny stuff onto the flour etc. Stir . it should be thick mix. Break in one egg at time und beat into the mix

Spoon bicarb into cup. Add the milk. und tablespoon hotkettle water Stir well. Add to your mix bowl. Stir gentle und then with a bit more ooomph :lol: to get blended together.


Pour into tin. Cookd for 30/40 mins. Test to check cooked by skewering its centre (I learn from past moment of direst embarrassment :oops: )

If clean.. it cooked.

Let it cool on rack.


It nice when just warm from oven with runny cream :cloud9: or English typical custard. :cloud9: :cloud9:


It become just divine after two mature days in cake tin though :wink:

This week CW warns of the danger of heading straight to the cake tin after a ride. After all.. a ride does make you a bit "peckish" :lol:

They recommend a "recovery sports drink "


Given they tell me iodine helps keep my thyroids and metabolism in tune... and that dairy product contain it.. I think I will stick to one of my milky honey smoothy drinks and have a piece of Wildy's Ginger cake :lol: all the same :lol:

This week the pro-biotic drink because "the journal "Molecualr Systems Biology" showed that this good appeared to lower blood fats and after fat and protein metabolism.

:scratchchin: in mice The "freindly bacteria also break down carbohydrates in the gut to create energy (basis of those adverts on the telly :lol:) and help fight diseases and IBS.

But :scratchchin: you get the same effects from bananas, garlic, berries, wheat, oatmeal, bran, barley, tomatoes and green veggies :wink: Personally - I think tastier if served up creatively :drink2:

Right eat Granny SMith apples as per CW .. these reduce inflamation and help recovedery after training/



But for a meal rich in vit b6 aqnd vit C .. with the added factor that whatever you do to ginger/. its medicinal qualities are never undermined ever



This is a one pan meal ., and Claire can adapt it. :bow:

OK guys .. if you can .. hit the "reduced for quick sale counters" :lol:

You never know.. and we managed this recipe at 50p overall by prudent purchase :lol: an some cheek on my wife's part :bow:


OK yuo need olive oil.. garlic clove.. spring onions (sliced) // chopped root ginger,.. lean chicken breast. red pepper (chopped) .. chestnut mushroom.. .. chou or mange tout peas..


chicken stock.. soy sauce.. honey.. flour,.

to serve .. rice or bed of mash potato

Jus put all into pan.. sizzle it. add liquid stock which can be bought or Oxo cube :wink:

Coat with flour// .. bring to boil and serve with rice or mash to preferences :lol:

Tasty. easy peasy.. good for you!"

March C+ is about getting enough vitamins and focuses on what vits B/C?E and calcium/iron/magnesium do for our bodies.

Vit B helps the body heal itself and suggests Marmite/Cornflakes/lentils :shock: /lean beer :clap: and wholemela bread/

Vit C? Citrus fruits/ strawberries.. salad leaves :lol:
(anit-oxidant and helps cuts to heal...

Vit E .. avocados and nuts.
boosts immune system



Iron? tomatoes, red meat .. lentils :shock: spring greens.. lamb's liverkale and dark choc :clap:

helsp the cardio-vascular system

Calcium? milk.. cheeses.. kale .. yogurt...sardines .. tofu ..

Magnesium - boosts energy and keeps blood sugar levels balanced. Eat your greens :lol: for this.. and eat some muesli :lol:
