But we make our own
Alice my wife makes a truly delicious one //
You need an orange, a lemon, and 4 oz raisins – ish. Golden syrup mmmm (Tate & Lyle - do you know I do not ever not seeing this on the larder shelf when I were a nipper. Alice – like my Mum uses 4 tablespoons and I fight with the kids as to who licks the spoon )
Unsalted butter - about 6 oz
4oz soft brown sugar
Oats (organic of course) – a good half pound
4 oz plain flour and 40oz pine nuts
You need a baking tin. greaseproof paper or baking parchment .. Large saucepan, juicer mixing bowl and trusty wooden spoons.
Heat the oven – 160 degree C – Gas mark 3.
Grease your baking tin with a scrape of butter and line with the baking paper.
Grate the zest of your citrus fruits don’t use the pith
Then – use your juicer and squeeze out the juice. Our kids enjoy this task
Put this in saucepan with raisins (or sultanas) Turn heat on low and bring to simmer.
Meanwhile – measure the golden syrup into larger saucepan with the zest Use a clean finger to help in drizzle into the pan and remember to wash fingers after subsequent licking. Add the butter and brown sugar. Heat gently and stir with wooden spoon. Till butter has melted and sugar dissolved. Switch off hob.
Mix the oats, flour and pine nuts
Pour this into the pan with the syrup and melted butter and sugar. Add the juice and raisins. Mix thoroughly.
Spread into the lined tin and use oven gloves (am ‘elf and safety conscious after all)

to place in oven for half our till golden brown.
After few minutes cut into required slices and just leave to cool and set. When cool enough to eat but still warm. Wolf a few down.
I tell you this is a highlight of our family kitchen “dos”

Yep – am a keen cook. I enjoy cooking too. I admit I caught this from the Swiss mob and especially the Mad Cats who are probably the most family led of the bunch in reality.
The nice thing about flapjacks is that you can vary with choc chips .. any dried fruit, nutmeg, cinnamon, ginger - whatever and you still have a high boost energy snack – essential to those of us who are active in sports and even country walking.
